1/2 lb unsalted butter, room temp.
1 c. light brown sugar, packed
1/2 c. sugar
2 tsp. vanilla
2 extra large eggs, room temp.
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. kosher salt
1 1/2 c. chopped walnuts
1 1/4 lbs. semisweet chocolate chunks

Preheat oven to 350º. Cream butter and sugars until light and fluffy in mixer with paddle attachment. Add vanilla, then the eggs, one at a time, and mix well. Sift together flour, baking soda, and salt, then add to butter mixture with mixer on low speed, mixing only until combined. Fold in walnuts and chocolate chunks. Drop dough onto baking sheet lined with parchment paper, using a 1 3/4 inch diameter ice cream scoop. Dampen your hands and flatten dough slightly. Bake for exactly 15 minutes (the cookies will seem underdone). Remove from the oven and let cool slightly on the pan, then transfer to a wire rack and cool completely.
