3 1/2 cups unbleached flour
1 1/2 cups brown sugar
1 1/2 cups white sugar
2 teaspoons baking soda
1 1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
4 eggs
1 cup salad oil
2/3 cups water
2 cups pumpkin
1 cup chopped nuts
1 cup chopped dates
1/2 cup raisons

Preheat oven to 350. Grease 3 medium loaf pans. Put a piece of wax paper in the bottom of each loaf and sprinkle with brown sugar. Combine flour, sugars, baking soda, salt and spices in a large bowl and fashion a well in the center. Break eggs and add salad oil, water and pumpkin. Beat well until mixed. Add dates, nuts and raisons. Pour into pans. Bake 1 hour. Cool 10 minutes before turning on wire racks to cool. Can be wrapped in plastic wrap followed by aluminum foil and frozen.
