1 lb cheese - grated
2 eggs (beaten)
1 tbsp. salt
1 tbsp. flour
1/2 tbsp. mustard
4 tbsp. butter
2 cups hot milk

Directions:
Directions:
Mix flour, salt and mustard with 2 tbsp. cold milk; stir in eggs. Pour over grated cheese. Pour hot milk over all; stir in double boiler until thick.

I remember having Welsh Rarebit for the first time at Grandmother's house as a child. She used Stouffer's over toast points with sliced tomatoes. I remember feeling very fancy and loving the meal!
