1 C. olive oil or vegetable oil
3 C. sugar
4 eggs
1 2/3 C. Canned unsweetened pumpkin
3 1/3 C. flour
11/4 t. salt
2 t. bkg soda
2 t. cinnamon
2 t. nutmeg
2 t. ginger
1 C. chopped walnuts (optional)

Directions:

Preheat oven to 350º lightly grease three 9x5 loaf pans.
Combine olive oil, sugar, eggs and pumpkin in a large bowl, beat well with a mixer.
In a separate bowl, mix together flour, salt, soda, cinnamon, nutmeg and ginger. Add to sugar mixture a little at a time, beating on low speed. Stir in nuts, Fill pans half full bake 1 hour.
