2 c. all purpose flour, sifted
2 t. baking powder
1 t. salt
1/2 t. baking soda
1 t. ground cinnamon
1/2 t. ground nutmeg
1 c. cooked, mashed sweet potatoes
1 c. granulated sugar
1/2 c. milk
2 eggs
1/4 c. melted butter
1 c. chopped pecans
Directions:
Directions:
Sift together flour, baking powder, salt, baking soda, cinnamon, and nutmeg; set aside. In a mixing bowl, combine sweet potatoes, sugar, milk, and eggs. Add dry ingredients and melted butter; mix until well-blended. Stir in pecans. Fill greased muffin cups half full. Bake in a preheated 350 oven 20 minutes or until toothpick inserted in center of muffin comes out clean.
