4 grouper fillets (or any mild white fish)
1 c. pan-searing flour (like Wondra)
1 T. ground cumin
1/4 t. cayenne pepper
Salt to taste
Olive oil

Directions:
Directions:
Mix the flour with the cumin, cayenne pepper, and salt. Heat a non-stick skillet over high heat, add 2-3 T. olive oil, and allow the oil to heat. Dredge the fish fillets in the seasoned flour, and place in hot pan. Brown fillets on one side, turn over, and reduce heat to medium. The fillets, depending on thickness, will take approximately 5-10 minutes to cook. Serve with Black Bean Pineapple Salsa.
