2 tbsp extra-virgin olive oil
2 tsp fresh lemon juice
1/2 tsp coarse-crain dijon mustard
1 (1 lb) head red leaf lettuce
1 avocado, peeled and thinly sliced
1 granny smith apple, thinly sliced
Salt and freshly ground black pepper
Chopped pecans

Combine oil, lemon juice, and mustard in jar. Add a pinch of salt and pepper, close tightly, and shake vigorously to combine.

Toss dressing with lettuce. Distribute salad among plates, top with avocado, apple slices, and sprinkle with pecans to serve.

For a sweet/tangy dressing, add a bit of sugar free maple syrup to taste. I also prefer more mustard than the recipe calls for. A favorite store bought honey mustard dressing would also work well with this salad.
