1 8oz. jar stuffed green olives, drained
1 - 12oz. jar roasted red peppers, drained
1/2 cup Italian parsley leaves
2 tablespoons red wine vinegar
3 tablespoons olive oil
2 cloves garlic, chopped
1 -8 inch round loaf italian bread
4 oz. thinly sliced swiss cheese
1/2 pound thinly sliced turkey breast
1 1/2 cups arugula or shredded romaine lettuce
4 oz. thinly sliced mozzarella
1/2 pound thinly sliced ham

1. Process olives, peppers, parsley, vinegar, olive oil, and
garlic in food processor on pulse until combined but still
2. Slice off the top quarter of the bread loaf; hollow out the top
and the bottom of the loaf to create an inch-thick shell.
3. Spread 1 cup of the olive mixture on the inside of the
bottom of the loaf; then layer remaining ingredients on top in
this order: swiss cheese, turkey, 2/3 cup olive mixture,
mozzarella cheese, ham and remaining 2/3 cup olive mixture.
Cover with top of loaf; wrap tightly in foil and refrigerate 2
hours. Slice into wedges and serve.
