3 lbs. sausage (I like Jimmy Dean Italian)
1 bunch of chopped celery
2 large onions chopped
2 cubes butter
rubbed sage
Fresh garlic
fresh rosemary
fresh thyme
1 Tbl poultry seasoning
2 cans Chicken Broth
2 eggs
1 loaf fresh whole wheat bread
2 boxes of stove top stuffing (dry form) or Seasoned bread cubes.(1 very large bag)
3 cups cooked wild rice (optional)
4 to 8 oz of chopped fresh mushrooms
1 can water chestnuts chopped
Canned milk

cook sausage and set aside in a large bowl. Saute the onions, celery and mushrooms with butter and add to sausage. Add 2 beaten eggs and the bread, rice, broth, chestnuts, and spices. Mix with big spoon. Add canned milk till you reach the moisture level you prefer. I make mine on the moist side.
