15 pounds new red, small potatoes, cooked, cooled in
refrigerator and then sliced with skins on.
1 bunch of fresh parsley, chopped
2# bacon fried, drained, RESERVE GREASE
1 red onion, chopped fine

Directions:
Melt 3 sticks of butter. Mix 3 tbsp. cornstarch with 1 cup of
sugar. Pour into butter and stir until thickened. Add 1 1/2
cups of water and 1 1/2 cups vinegar. Cook until blended
(taste).

Use very large pan and put one layer of potatoes, onion,
parsley, bacon, season salt, and 2 tablespoons bacon grease
over potatoes. Repeat. End up with parsley on top and crisp
bacon. Pour sauce over whole pan of potatoes (Pour only
when ready to heat). When ready to heat, put casserole in a
warm, 350º oven until desired temperature. Wonderful!

Serves: 50
