15 pounds new red, small potatoes
1 bunch of fresh parsley, chopped
2# bacon fried, drained, RESERVE GREASE
1 red onion, chopped fine

Melt 3 sticks of butter and mix 3 Tablespoons cornstarch with
1 cup of sugar. Stir until thickened. Add 1 1/2 cups of water
and 1 1/2 cups vinegar. Cook until blended (taste).

Use very large pan and put one layer of potatoes, onion,
parsley and bacon, season salt, and 2 tablespoons bacon
grease over potatoes. Repeat. End up with parsley on top
and crisp bacon. Our sauce over (Pour only when ready to
heat). When ready to heat, put casserole in a warm oven until
desired temperature. Wonderful!

Serves: 50

For a much smaller batch:
3# potatoes,
.4 # bacon,
1/4 of a red onion,
1/2 stick of butter plus tbsp.,
.6 tbsp. cornstarch,
.20 cup of sugar,
.30 cup of water,
.30 cup of vinegar.
