5 lb roasting chicken
1/4 cup butter
1/2 cup dry white wine
1/2 cup chicken broth
2 tsp salt
12 small new potatoes, unpeeled
18 baby carrots, scraped
18 small white onions, peeled
12 medium mushrooms. cut in half
1/4 tsp rosemary
1/2 cup chopped celery leaves

Directions:
Directions:
-Melt the butter in a large skillet and brown the chicken slowly. This will take about 30 minutes, keep turning the chicken to brown it on all sides.

-Transfer the chicken to a large casserole.

-Put wine, broth and salt into the skillet and bring them to a boil.

-Keep stirring to loosen all the good brown bits that may have stuck to the bottom.

-Pour this over the chicken

Cover the casserole and cook over medium heat for 45 minutes

-Than add the vegetables in layers- potatoes on the bottom, than carrots, onions, and mushrooms

-Sprinkle the rosemary and celery leaves on top.

-Cover the casserole again and cook for another 45 minutes or until the chicken is tender and the vegetables are done
