1 pie shell,
2 large sweet potatoes,
1 cup brown sugar,
1/2 tsp. cinnamon,
1/2 tsp. salt,
1 tsp. ginger,
1/8 tsp allspice,
2 tbsp. molasses,
3 eggs, slightly beaten,
1 cup evaporated milk.

Peel and cube sweet potatoes; boil until very tender; strain and mash, then strain again to remove excess water. Combine sweet potatoes with remaining ingredients, mix well (if smoother consistency desired, use food processor). Pour mixture into pie shell. Bake @ 425 degrees for 15 minutes, then reduce to 350 degrees for 50 minutes until knife comes out clean.

Same recipe can be used for pumpkin pie; just substitute sweet potatoes with 2 cups cooked and mashed pumpkin. Best served with hot with scoop of vanilla ice cream.
