Meringue
1 1/2 tsp vanilla extract
1/2 txp cream of tartar or 2 tsp white vinegar
1 1/2 tbsp cornstarch
1 1/2 cups granulated sugar
3/4 cups egg whites @ room temp
pinch salt
Topping
2 pints fresh or frozen berries
1/4 cup sugar
whipped cream

Preheat oven to 400º turn down to 250º when you put the pavlova into the oven.
Whip egg whites, cream of tartar and salt - starting on low and slowly increasing to medium until soft peaks form (2-3 minutes). Increase speed to medium high - slowly sprinkle in sugar and corn starch mixture. A few minutes after dry ingredients are added - slowly pour in vanilla and vinegar (if using). Increase speed and whip till meringue is glossy with stiff peaks (4-5 minutes). Shape on parchment paper.

Bake 50-60 minutes - turn oven off - leave to cool.
