1 pound Italian sausage
1 cup coarsely chopped onion
2 cloves of garlic, minced
5 cups of beef broth
1/2 cup water
1 cup dry red wine
2 cups chopped, peeled, tomatoes
1 cup sliced carrots
1 (8oz) can tomato sauce
1/2 teaspoon basil
3/4 teaspoon oregano
3 tablespoons chopped parsley
1 medium green bell pepper, chopped
2 cups fresh or frozen tortellini

Directions:
Directions:
Remove casing from sausage. Brown in a saucepan, stirring until crumbly; drain and set aside. Saute the onion and garlic in a large nonstick saucepan until tender. Add the beef broth, water, wine, tomatoes, carrots, tomato sauce, basil, oregano and sausage. Simmer, covered, for 30 minutes; skim the surface. Stir in the parsley, green pepper and tortellini.
Simmer covered, for 35-40 minutes or until the pasta is tender. Ladle into soup bowls. Garnish the servings with Parmesan cheese.

Yield: 8 servings.
