2 10lb bags frozen wings
2-3 bottles of Durkee Red Hot Sauce
Butter
Celery Sticks
Blue Cheese or Ranch
Stainless Steel Large Frying Pot
Crisco- (Not Oil) Only hard lard type!!!

Heat oven to 300º
Put chicken wings in clean sink and fill with warm water to remove ice crystals from chicken. Lay out a large towel on the counter next to sink while soaking the chicken for 10 min. Let chicken dry off for a few min. Test the grease with one wing and when dropped in it should boil that wing like no tommorrow! If ready add enough wings to the grease so they are not jammed but fill enough to boil hard with room. Meanwhile, get a large bowl, add 2 bottles of hot sauce and 2 cubes of melted butter to the hot sauce. When first batch of wings are floating on top of oil, take out and drain on towels. Immediatley put into sauce mixture. Let set 5 min in the sauce. Take out, put in a cake pan and leave in oven on 300, stirring every time you open the oven door. Repeat until all wings are done. Serve with blue cheese and celery!
