6 oz boneless chicken breast, cut into strips
1/4 cup olive oil
2-3 oz white wine
2 oz canned whole Roma tomatoes, cut into strips
2 tbsp of juice from tomatoes
Flour as needed
4 oz sliced mushrooms
1 tbsp minced garlic
1 tbsp fresh basil, cut into strips
1 tsp of butter
Salt & pepper to taste
Penne pasta, cooked and drained

-Heat oil in small skillet over medium heat

-Dredge chicken in flour

-Saute until lightly brown (approx 1 min per side)

-Add mushrooms, saute until tender (approx 1 min)

-Add basil & garlic, saute until garlic is slightly browned (approx 30 seconds- don't let it burn)

-Add white wine

-Drain tomatoes, reserving 2 tbsp of juice

-Cut tomatoes into strips

-Add tomato strips, reserved juice and butter

-Let simmer until sauce thickens slightly

-Add salt & pepper to taste

-Toss with penne pasta
