3 or 4 chicken breast
1 cup of frozen mixed vegetables (or more)
2 cups white rice
1 packet Sazon Goya with Coriander & Annatto (orange box)

olive oil (any oil will work)

Directions:
Cook chicken in water, adding about 2 tsp. salt and some big pieces of onion (maybe 1/4 of onion). Cook mixed vegetable in a seperate pan with water. Shred chicken when it is finished cooking. Remove big pieces of onion and use that water to cook the rice. Make sure the water measures to 4 cups (always double water to rice). Add 1 heaping Tbsp. olive oil and Goya packet. If you want a little more flavor you can add more salt, or I prefer maggi, in the water. Bring it to a boil, add white rice and stir. When the rice is done mix everything together (rice, chicken and vegetables).

My sister-in-laws taught me how to make it. This is a great dish when there are many people to feed. They'll also mix in cut up hot dogs and top it off with ketchup.
