3/4 cup unsalted shelled pistachios
3/4 cup sugar
2 cup whole milk
1 t almond extract
5 large egg yolks
2 drops green food coloring

Directions:
Directions:
Finely grind nuts and 1/4 cup sugar in food processor. Combine nut mix with milk and almond extract in pot. Bring to a boil.

Whisk egg yolks and 1/4 cup sugar in large, separate bowl and gradually whisk milk mix into yolk mix. Return to pot. Stir over med-low heat until thickened, about 8 min (do not boil).

Remove from heat; whisk in food color. Cool in fridge and then churn in ice cream maker. Transfer to container and freeze.
