1 1/2 cups brown sugar
1/2 cup water
4 tsp vanilla
1 tsp salt
6 cups rolled oats
2 cups chopped nuts or slivered almonds (optional)
dried blueberries or cranberries (optional)

Directions:
Directions:
Preheat oven to 275º. Line 2 cookie sheets with parchment paper (or grease the sheets well).

Combine brown sugar and water in a 4 cup microwave proof glass bowl. Cook in microwave until sugar dissolves. Add vanilla and salt.

In a large mixing bowl, combine oats, nuts and brown sugar mixture. Stir until thoroughly coated. Spread granola onto cookie sheets and bake 45 minutes - 1 hour or until golden and crunchy.

When it comes out of the oven it will be very pliable - you may want to add the dried fruit at this point. When it has cooled completely, store in airtight container - will last awhile.
