Spinach and Cheese Manicotti Recipe

1 pkg. manicotti pasta (approximately 14 pieces)
1 large pkg. ricotta cheese
2 c. shredded mozzarella cheese, divided
1/2 c. parmesan cheese, divided
1 large pkg. frozen or steamed spinach
2 eggs
1/2 tsp. salt
1/4 tsp. pepper
1 14-oz. jar marinara sauce

Preheat oven to 350

Cook pasta according to package directions; drain. Handle cooked pasta delicately. Lay flat on foil to cool.

Meanwhile, in a large bowl, stir together ricotta, 1 1/2 cups mozzarella, 1/4 cups parmesan, spinach, eggs, salt and pepper.

Carefully spoon cheese-spinach mixture into pasta tubes.

Spoon a thin layer of marinara sauce into casserole or lasagna dish. Place filled pasta tubes in dish and cover with marinara sauce. Sprinkle with remaining mozzarella and parmesan cheese.

Cover with foil or lid and bake 35 minutes or until hot and bubbly.
