1/4 cup butter
1/2 cup finely diced onion
1/2 cup finely diced carrot
1/2 cup finely diced celery
1/4 cup flour
1 1/2 Tbsp cornstarch
4 cups milk
4 cups chicken stock
1/8 tsp baking soda
1 cup processed american
salt & peppper
2 Tbsp pasely; chopped fine

Directions:
Directions:
Melt butter in the pot you plan to make soup in; add onions, carrots, celery and saute over low heat until soft.
Add flour and cornstarch and cook until bubbly. Add stock and milk and make a smooth sauce.
Add soda (before cheese!)
Add cheese, grated
Season with salt and pepper
Add parsley a few minutes before service
