3/4 c. butter
3/4 c. sugar
1 egg
1/2 tsp. vanilla
1/2 tsp. peppermint extract
2 c. flour
1/2 tsp. salt
1/4 tsp. baking powder
1/3 c. flaked coconut
1 tsp. red food color

Directions:
Directions:
Preheat oven to 375º

Cream butter and sugar. Beat in egg, vanilla and peppermint extract. In a separate bowl, stir flour with salt and baking powder. Add to cream mixture.

Divide dough in half. Stir coconut into one portion; blend food color into remaining portion. Cover and chill dough for 30 minutes (do not over-chill).

Divide each portion of dough into small balls. With hands, roll each ball into a 5-inch rope. Twist a red and white rope together to form candy canes.

Bake at 375º for about 10 minutes.
