5 large white potatoes, peeled
1/2 c. chicken broth
salt and pepper to taste
1/4 c. olive oil
juice of lemon

Directions:
Directions:
Peel potatoes and cut into 4 wedges per potato. Place in glass casserole dish, potato wedges facing up. Mix chicken broth and lemon together in small bowl and pour over potatoes. Drizzle olive oil over tops. Sprinkle salt and pepper over all. Bake at 350º for 1 hour, or until tender and browned on top. Bake uncovered.
