2 1/2 c. elbow
1/4 c. butter
1/4 c. flour
2 1/4 c. milk
salt and pepper
2 c. grated cheddar cheese

Directions:
Directions:
Start oven at 375º for moderate. Cook macaroni in boiling salted water until tender. Drain thoroughly. While macaroni cooks, melt butter in saucepan. Stir in flour smoothly and add milk gradually. Cook, stirring constantly until sauce bubbles. Season with salt and pepper. In casserole make alternate layers of macaroni and almost all the cheese. Pour hot sauce over top and sprinkle with remaining cheese. Dot with additional tablespoon of butter. Bake for about 35 minutes.
