1/4 c. butter or margarine, softened
1/2 c. sugar
1 egg
3/4 c. milk
1/4 tsp. vanilla
1 3/4 c. plus 1 tbsp. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 c. blueberries

Directions:
Directions:
Cream butter and sugar until light and fluffy; beat in egg, then milk and vanilla. Beat until nearly smooth. In small bowl, stir together 1 3/4 c. flour, baking powder and salt. Add to milk mixture; stir until moist. Batter will be lumpy. Toss blueberries with remaining 1 tbsp. flour, fold into batter. Spoon into greased tins. Bake in preheated oven at 425º for 25 minutes or until evenly browned.
NOTE: While muffins are still hot, brush them with butter and dip in sugar.
