Meaty parts of head and fat pieces of hog.

Directions:
Directions:
Take meaty parts of head and fat pieces of hog. Boil until tender. Grind through food chopper, using fine blade. Add garlic to taste, and enough coarse salt. Mix this together with your hands and add enough salt to feel grainy. Pack in jars and keep in a cool place.

To use: Fry out until crackly and use as a topping on early springtime salads. May be added to the sauerkraut the last few minutes before serving.
