1/2 cup slivered almonds
1/4 cup butter
6 tablespoons flour
2 cups chicken broth
1 cup whipping cream
1 tablespoon minced onion
1 tablespoon minced fresh parsley
1 teaspoon salt
2 tablespoons sherry or dry white wine
1 jar pimentos (optional)
3 cups cooked rice
8 ounces frozen peas
2 1/2 cups chopped cooked chicken

Saute almonds in butter in skillet for 10 minutes; remove from
heat. Stir in flour. Add chicken broth and whipping cream. Cook
until thickened, stirring constantly. Add onion, parsley, salt,
sherry, pimentos, rice, peas and chicken; mix well. Spoon into
baking dish. Bake, covered, at 375 degrees for 20-30 minutes,
Bake uncovered, for 10 minutes longer or until bubbly.
