Turkey and Vegetable Stuffed Bell Peppers Recipe

4 varied colored bell peppers, tops removed, seeded
1 pound ground turkey
2 tablespoons olive oil
cup onion, chopped
1 cup sliced mushroom
1 zucchini, chopped
red bell pepper, chopped
yellow bell pepper, chopped
1 cup fresh spinach
1 (14.5 ounce) can diced tomatoes, drained
1 tablespoon tomato paste
Italian seasoning, to taste
garlic powder, to taste
salt and pepper, to taste

1. Preheat oven to 350 degrees F (175 degrees C)

2. Wrap bell peppers in aluminum foil and place in a baking dish. Bake for 15 minutes in the preheated oven. Remove from oven.

3. In a skillet over medium heat, cook the turkey until evenly browned. Set aside. Heat oil in the skillet and cook onion, mushrooms, zucchini, chopped red and yellow pepper, and spinach until tender. Return turket to the skillet. Mix in tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the peppers with the skillet mixture.

4. Return peppers to the oven, and continue baking for an additional 15 minutes.
