4 15 oz cans white beans, drained.
6 cups chicken broth, 1 onion, minced.
3 garlic cloves, minced, 3 tbs olive oil.
1 and 1/2 lbs cooked boneless skinless chicken breasts, cut into 1/2 inch dice. (If fresh, just season with salt, pepper, garlic powder, brown in hot olive oil to coat bottom of saute pan till nearly done. Drain on paper towels to cool. Then cut in dices.
2 cans (4 oz cans) green chilies.
2 tsp ground cumin.
1 and 1/2 tsp crushed red pepper flakes.
1 tsp kosher salt.
1/2 tsp ground black pepper.
1 and 1/2 tsp crushed dried oregano.

In soup pot or large (6 to 8 quart pot), Saute onions in olive oil for 5 minutes, stirring w/wooden spoon. Add garlic in the middle so onion acts as barrier as not to burn garlic. cook till mushy. stir in chicken. lower heat to medium and saute 5 mins, stirring frequently. Add green chilies, garlic, cumin, oregano and red pepper flakes and still well.
Season to taste w/ salt and pepper. return to boil, reduce heat and simmer 1 and 1/2 hrs or more. Add water or more chicken broth if needed. Garnish with cheddar cheese.Or, Just before serving, add a good quality handful of ceasar croutons, then top with cheese.
I generally use the packaged pre-cooked chicken breast strips which are sold for preparing burritos and the like. it makes the whole meal a lot simpler.
Serve with cuban bread and salad. You'll love it!
