1 jalapeno pepper
1 tsp. cumin ( divided)
1 1/4 cup chicken broth
1 can pinto beans, drained
2 stalks chopped celery
2 cloves chopped garlic
1 Tbsp. Olive Oil
Flour Tortillas
1/2 cup shredded cheese
Lime Wedges
1 carrot
3/4 cup can tomatoes
1 tsp. salt
2 pork cutlets
1 cup chopped onion
1/8 tsp. cinnamon
1/4 cup chopped cilantro
2 cups cooked rice
Lettuce, Tomato, Salsa

Directions:
Directions:
Rub both sides of pork with half salt and cumin, brown in oil. Cut into 1/2 inch pieces and set aside. Saute jalapeno, onions, carrot, celery, garlic, remaining salt, cumin and cinnamon. Cook 5 to 8 min. Add canned tomatoes and cook 3 min. Mash portion of beans and add to mixture. Add broth and pork. Bring to boil and simmer 30 min. covered. Uncover and cook until mixture thickens. Add cilantro. Spoon rice and bean mixture onto tortilla. Sprinkle with cheese, lettuce, tomato and salsa. Serve with lime slices.
