1/2 cup onions
1/2 cup mushrooms
olive oil
3 tablespoons butter
1/8 cup flour
1 cup of cream or whole milk
mozzarella or Parmesan
3-6 chopped roma tomatoes
1/4 teaspoon cayenne pepper
Cajun seasoning
white pepper
3 tablespoons tomato paste
1 teaspoon garlic powder
1 teaspoon onion salt

Saute garlic, onions, and mushrooms in olive oil. Add cut up chicken, once cooked through, pull out of pan and set aside. Melt butter in a pan and flour, stirring continuously over medium heat. Once blended, add cream or milk, to the pan stirring constantly. Add a handful of cheese, and once blended, add another handful. Add in tomatoes, cayenne pepper, and a shake of Cajun seasoning, and white pepper to taste. While still stirring, add tomato paste, garlic powder, and onion salt. Once sauce is complete, add chicken and vegetable mixture back in and heat through. Serve immediately over your favorite pasta.
