1/2 cup chopped onion
1/2 cup chopped celery
2 packages Louis Rich Imitation Crabmeat (1 1/2 lbs)
1 T parsley
2 T lemon juice
1 1/4 sticks butter
Black Pepper
1 sleeve Ritz cracker (crushed)
1/2 can cream of chicken soup
1/2 can cream of mushroom soup

Melt butter -- set aside
Crush crackers, mix all other ingredients in baking dish (11 x 13). Drizzle butter over top and bake at 325º for 1/2 hour.

This tastes like a wonderful lobster stuffing. Serve with mild cracker or french crudites.
