2 lbs. beef, cubed
3 oz. finely chopped Spanish onion
1 tsp. ginger root (freshly chopped in food processor)
1/4 c. dry white wine
1/4 c. soy sauce
chicken stock (enough to cover)
(canned chicken broth may be substituted)
1 lb. broccoli florets (blanched and drained)
1/2 lb. fresh mushrooms, quartered

Directions:
Directions:
Place beef cubes, onion, ginger, wine, soy sauce and chicken stock (enough to cover the beef) in a large heavy pot and simmer 2 to 3 hours until tender.

Mix corn starch with equal parts of water and stir
into the beef until the broth is the consistency of gravy.

Just prior to serving, add the broccoli and mushrooms. Serve over a bed of rice.
