2# sweet potatoes cut into 1" chuncks, 4 c. cooked
1 c. sugar
8 oz. egg substitute
1/2 c. packed brown sugar
1 tbsp. grated orange zest
2 tsp. vanilla extract
1 1/2 tsp cinnamon
1/2 tsp. allspice
1/4 tsp. salt
1 12 oz. can fat free evaporated milk

Cook sweet potatoes 15 to 20 minutes. Mash until smooth. Preheat oven to 350º. Spray a 2 quart baking dish with nonstick spray and place inside a roasting pan large enough to accomodate the dish. Combine the mashed potatoes with other ingredients except milk. Blend well. Add in milk. Use electric mixer to blend. Put mixture in dish in roaster. Add boiling water around dish in roaster to form a water bath. Bake 45 to 60 minutes or until puffy and center jiggles slightly when shaken. Let cool 10 minutes before serving.

2/3 cup serving is 4 Weight Watcher points if prepared with sugar. I use Splenda for sugars to make this lower calorie.
