6 medium potatoes
2-3 medium onions
10 saltine crackers
3 tablespoons milk
1/2 cup grated sharp cheddar or swiss cheese
4 eggs, separated
1 teaspoon salt
1/2 teaspoon pepper

Directions:
Directions:
Peel and grate potatoes and onions. Crumble crackers and
soak in milk for a few minutes. Add crackers to grated
potatoes, onions and cheese. Beat egg yolks slightly, and
add to potato mixture along with seasonings. Beat egg whites
until stiff, but not dry and fold into potato mixture. Spoon into a
well greased pyrex bread loaf pan. Bake in a 350 degree
oven for 1 hour and 15 minutes, or until tender. Turn onto a
warm platter and invert. Slice to serve.

Serves: 8
NOTE: Best side dish to a roast beef dinner.
