4 T. (1/2 stick) chilled unsalted butter
4 fillet mignon (4oz. each)
1/3 c. chopped shallots
2/3 c. cabernet wine
1 T. capers (optional)
1 T. Dijon mustard (Nancy's)
1/2 c. chopped fresh parsley

Directions:
Directions:
Cook fillet's in skillet with butter to meat temp of choice. Remove fillet's to dish. Add shallots to same skillet, saute' for 1 minute. Add wine, capers, and mustard. Simmer until slightly thickened (about 2 minutes). Stir in parsley. Reduce heat to medium-low. Whisk in remaining butter, salt, and pepper. Arrange fillet's on platter and pour sauce over each.

Jill usually serves this with mashed potatoes and some roasted vegetables. This recipe was trial tested on our friend Jim Williams and he "highly approved it to be in our cook book!"
