4 lbs. Haddock fillet
1 c. olive oil
1 1/2 c. canned tomatoes
1 c. white wine
3 chopped onions
3/4 c. chopped parsley
2 tsp. tomato paste
1 tsp. basil
2 cloves chopped garlic
2 finely chopped celery sticks
salt and pepper to taste

Have fish cleaned and scaled. Wash thoroughly. Rub with salt and pepper and sprinkle with lemon. Saute' chopped onions, garlic, celery in olive oil until golden brown. Add wine , tomatoes, and seasoning. Cook for about 5 minutes. Lay fish in large greased baking pan. Pour sautéed vegetables over all. Sprinkle with chopped parsley. Add a little water and bake at 350º for about an hour.

Connie cuts white potatoes in half and lays them in with fish and covers all with the sautéed vegetables. She also suggests that if the meal is done and there is a lot of juice in pan, reduce on stove top.
