1/2 lb beef tenderloin or boneless top loin steak (about 1/2" thick)
2 Tbsp butter
1-1/2 cup beef broth
2 Tbsp ketchup
1 tsp salt
1 small clove garlic, finely chopped
8 oz mushrooms, sliced
1 medium onion, chopped (about 1/2 cup)
3 Tbsp flour
1 cup sour cream

Cut beef across grain into strips, each about 1-1/2" x 1/2". (For ease in cutting, partially freeze beef). Cook beef in butter in 10" skillet over low heat, stirring occasionally until brown. Reserve 1/3 cup of the broth. Stir remaining broth, ketchup, salt and garlic into skillet. Heat to boiling, reduce heat. Cover and simmer about 10 minutes until beef is tender. Stir in mushrooms and onion. Cover and simmer about 5 minutes until onion is tender. Shake reserved broth and flour and stir into beef mixture. Heat to boiling stirring constantly. Boil and stir 1 minute. Stir in sour cream. Serve over hot cooked noodles or rice.
