4 baking potatoes
4 tbsp. butter, melted
1 C bread crumbs
2 eggs
1 1/4 C milk
1 1/2 lb. broccoli
1 C bread crumbs
1/3 C grated sharp cheese
sliced almonds
2 flounder fillets, 3/4 lb. to 1# each, halved
1/4 C canola oil
2 Tbsp flour

Directions:
Potatoes - clean and make 2-3 slits in top of 4 baking potatoes. Place on paper towel in microwave for 4 minutes or bake at 425 degrees in heated oven for 35-40 min.

Broccoli - Melt butter, add fine bread crumbs. Whisk eggs with 1/4 cup milk.
Parboil broccoli spears for 3 minutes.
Dip spears lightly in egg wash, coat lightly with crumbs
Place on flat cookie sheet in 350 degree oven until tender and lightly browned. 25 -30 minutes. Sprinkle with cheese sauce and almonds.

Fish - Baste lightly with canola oil, place fish on 1" rimmed baking pan in oven for 25 minutes or until opaque and flakes easily.

Cheese sauce - 2 tbsp. melted butter in sauce pan + 2 tbsp flour, salt and pepper. Blend, simmer a minute
Add 1 cup milk whisking until thickened. Add 1/3 cup grated sharp cheese until melted. (optional - add a pinch of dry mustard).
