Zesty Carrots Recipe

6 large carrots
2 tsp salt
2 T. onion chopped fine
1/4 tsp pepper
1/2 cup mayonnaise
2 T. horseradish

Topping:
1/4 cup Ritz cracker crumbs
2 T. melted butter

Directions:
Directions:
Peel carrots and cut into strips. Put carrots in sauce pan and cover with 1 inch of water and add salt. Bring to boil, cover and cook 8-10 minutes until tender. Drain, but save 1/4 of the liquid. Put carrots in 1 1/2 quart casserole (10x6 dish). Combine liquid, onion, horseradish, mayo, salt and pepper. Pour over carrots. Top with cracker crumbs browned in butter. Cover with foil and bake at 425 degrees for 20 minutes.
