4 cups red potatoes, cut-up
1/4 cup olive oil
1/4 cup (or more) fresh parsely finely chopped
Adobo
1/4 cup parmesan cheese (or mozzerala)

Directions:
Directions:
Clean potatoes and cut into bite size. Cook in water for 20 minutes or until they are starting to become soft - don't over cook them. Place red potatoes in a baking dish and sprinkle generously with Adobo. Combine olive oil and parsley together, mix well. Pour over potatoes and bake @ 325º for 15 minutes. Sprinkle cheese on top and serve.
