3 cups uncooked bow tie pasta
2 Roma tomatoes, diced
1 small onion, chopped
1 medium zucchini, sliced
1/2 pound boneless, skinless chicken breast, cut into 1 inch chunks
2 tsp. olive oil
1/2 cup frozen peas
1 tsp Italian Seasoning
1 tsp garlic powder
1 tsp salt
1/4 cup grated Parmesan cheese (optional)

Directions:
Directions:
Cook pasta according to package directions, drain and keep warm.

Meanwhile, dice tomatoes, chop onion and slice zucchini. Cut chicken into chunks.

Heat oil in stir fry skillet over medium-high heat until hot. Add chicken. Stir fry until chicken is no longer pink. Reduce heat to medium. Add onion, zucchini, peas, seasonings and salt. Stir fry until vegetables are tender. Add tomatoes, heat 1-2 minutes, stirring gently until heated through. Remove from heat.

Stir in warm pasta. Sprinkle with Parmesan cheese. Serve immediately.
