Group 1 ~

2 cups flour
2/3 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Group 2 ~

8 oz. lemon yogurt
1/4 cup butter, melted and cooled
1 egg
1 to 2 tsp. lemon peel or 1-2 T of fresh lemon zest
1 tsp pure vanilla extract

2 cups fresh blueberries
1 T sugar

Preheat oven to 400º.

Combine Groups 1 and 2 in separate bowls. Mix both groups together stirring until blended. Add blueberries, stirring carefully. Pour into lined muffin tins. Sprinkle 1 T sugar over muffins before baking.

Bake for 20 - 25 minutes.
