Rhubarb Buckle Recipe

Crust (make first)
1 cup flour
5 tbsp. brown sugar
1 stick (1/2 cup) margarine of butter

Cut together till crumbly.
Pat 2/3 of mix into bottom of quiche, pie or square 9x9 baking dish.
Bake 15 min. at 350º

Reserve other 1/3 for topping

Filling
2 eggs or equivalent egg substitute
1/4 cup flour
1 cup flour

Beat eggs and sugar till frothy, add flour and beat til well blended. Stir in 4 cups finely sliced rhubarb.
Pour over baked shell. Crumble remaining 1/3 of crust over top.

Bake 35 min at 350º until custard is "set" or toothpick comes out clean.
