4 lbs. fresh asparagus
16 pieces smoked bacon
kosher salt to taste
freshly ground black pepper to taste

Preheat oven to 325º. Trim off the woody ends of asparagus and blanch for 40 to 60 seconds. Plunge immediatley into an ice-water bath; when cooled, drain and set aside.

Cook bacon in the oven for 10 to 12 min, untill lightly done but still soft, then blot with paper towels. Make serving size bundles of asparagus stalks and wrap each with 2 strips of bacon, securing with toothpicks. Place bundles on baking sheet, season with salt and pepper, and reheat in the oven for about 5 min. Remove toothpicks before serving.
