1 medium chopped onion
olive oil
8 to 10 chicken thighs
1 c. orzo or hilopites
chicken broth
15 oz. can of tomato sauce
salt and pepper to taste

Directions:
Directions:
In a small pot saute' onions in olive oil until soft. Add chicken and brown each side, turning chicken. Add tomato sauce. Add a little of the chicken broth, making sure liquid is covering chicken at all times and simmer on low heat for a little over an hour, until chicken is falling off bone. Keep adding chicken broth if pot gets low. At very end add the orzo or Hilopites and boil until cooked. Top with some grated Pecarino-Ramino cheese or Mizithra.
