1 tbs butter, melted
1-1/4 cups chopped onion
1/4 cup chopped pimento
1 tbs chopped mild green chili or Jalapeno peppers
5 cups corn chips
1 can (40 oz.) chili with beans
2-1/2 cups shredded Monterey Jack cheese

Directions:
Directions:
Preheat oven to 400 degrees. Grease a 2-qt. baking dish. Saute onion in butter until transparent; remove from heat and stir in pimento and peppers. Crush 4 cups of corn chips coarsely to make about 2-1/2 cups. Reserve 5th cup of corn chips. Line bottom of baking dish with half the crushed chips. Carefully spread half the chili over the chips. Layer half the cheese (pressing down slightly) and half the onion mixture. Repeat layers. Garnish with remaining corn chips. Bake for 40 minutes. Serves 6-8.
