This is a great dish that has put me on the map with my friends..Or should I say they always want to know when I make the dish so they can come over!

1/2 yellow onion chopped
1/2 white onion chopped
1 lb of moose burger
4 cloves of garlic chopped
1 TBL spoon of bacon grease
1 can of mexican style tomatoes
1 cup of picante sauce
1 can of black beans drained & rinsed
1 can of pinto beans " " "
4 red fresnos chiles ( the red ones) sliced
4 jalepeno chiles sliced
1 large tomatoe ( chopped )
1 cup of monterey jack cheese
1 cup of med. sharp chedder cheese
2 teaspoons of ground cumin
1/2 teaspoon of chili powder
( cilantro if you like )

In a a 5 quart or larger dutch oven melt bacon grease & then add the yellow onion & garlic, brown but don't over cook... Then brown the burger salt & pepper to taste...Once the burger is brown add can tomatoes, picante sauce, the beans, chiles, cumin, & chili powder.... Bring to a boil then, Simmer for 20 minutes or so....At this time cut up tomatoe & white onion, & shred the cheese..Put the above on the top of the mixture w/ the heat OFF & place the lid on top so every melts.... Let it stand for 15 minutes or so, serve... You can add sour cream if you like along w/ black olives & chopped lettuce. We use it as a appitizer for mexican night w/ tortilla chips...
