Sara's Chicken Tarragon Recipe

6 Chicken Breasts
2/3 c. dry bread crumbs
4 T. olive oil
1/3 c. grated onions
1 tsp. fresh ground pepper
3/4 tsp. tarragon
1/2 c. dry white wine
1 c. heavy cream
1/3 c. chopped fresh parsley

Directions:
Directions:
Pound chicken breasts. Coat chicken with bread crumbs. Heat oil in large skillet, add chicken and saute' until brown on both sides; about 2 minutes per side. Remove chicken and set aside. Add onions to skillet and saute' until soft then return chicken to pan and season with salt, pepper, and tarragon. Pour wine over all, cover, and simmer slowly for 20 minutes or until chicken is tender. Remove chicken when done and place on warm platter. Add cream to skillet, increase heat and boil stirring to lift brown particles from bottom of skillet until sauce is thickened and reduce to 1 1/2 cups. Spoon over chicken and garnish with parsley.

This was one of Sara's favorite meals in her "picky" years when her food selections were very limited. Chicken Tarragon was a popular birthday request for Sara-Bara. Sara so nicely wrote then recipe down for us one year so we could make it for her birthday dinner at Yiayie and Papous house.
